Corn Fritter (Perkedel Jagung)

This dish is one of the first dish that I learned how to cook back in my Uni days. It is so easy to make!

INGREDIENTS:

  • 2 sweet corn cobs - grated or blended (If you don't have fresh corn, you can totally use the canned or frozen corn)

  • 2 sweet corn cobs - kernels cut off the cob whole (If you don't have fresh corn, you can totally use the canned or frozen corn)

  • 5 kaffir lime leaves (tear the leave and remove the stalk as it may be bitter) - sliced extremely finely

  • 3 spring onions - finely chopped

  • 1 bird eye chili (Optional) - finely chopped

  • 8 tablespoon of rice flour

  • 4 tablespoon of plain flour

  • 1 teaspoon of coriander powder

*1/2 teaspoon of turmeric powder (optional) - just to bring out the color

*2 eggs - beaten

*200 ml water

  • salt, pepper and sugar to taste

  • enough oil to fry the fritters

Blended smoothly:

  • 8 shallots
  • 5 garlic cloves
  • 1/2 of brown onion

STEPS:

  1. Mix all ingredients together in a large mixing bowl.

  2. Heat up the oil on medium heat

  3. Attempt frying your first fritter by using one tablespoon of mix gently lowering it into the pan.

  4. Fry on medium heat until golden brown. Remove from pan and taste-test, adjust to taste (i.e. add more sugar or salt or pepper).

  5. When you've got your mix perfect, fry up several at once - but try not too overcrowd the pan.
