This dish is one of the first dish that I learned how to cook back in my Uni days. It is so easy to make!
INGREDIENTS:
-
2 sweet corn cobs - grated or blended (If you don't have fresh corn, you can totally use the canned or frozen corn)
-
2 sweet corn cobs - kernels cut off the cob whole (If you don't have fresh corn, you can totally use the canned or frozen corn)
-
5 kaffir lime leaves (tear the leave and remove the stalk as it may be bitter) - sliced extremely finely
-
3 spring onions - finely chopped
-
1 bird eye chili (Optional) - finely chopped
-
8 tablespoon of rice flour
-
4 tablespoon of plain flour
-
1 teaspoon of coriander powder
*1/2 teaspoon of turmeric powder (optional) - just to bring out the color
*2 eggs - beaten
*200 ml water
-
salt, pepper and sugar to taste
-
enough oil to fry the fritters
Blended smoothly:
- 8 shallots
- 5 garlic cloves
- 1/2 of brown onion
STEPS:
-
Mix all ingredients together in a large mixing bowl.
-
Heat up the oil on medium heat
-
Attempt frying your first fritter by using one tablespoon of mix gently lowering it into the pan.
-
Fry on medium heat until golden brown. Remove from pan and taste-test, adjust to taste (i.e. add more sugar or salt or pepper).
-
When you've got your mix perfect, fry up several at once - but try not too overcrowd the pan.
ENJOY!
