Perfectly Peachy Single-Serve Healthy Cheesecake

Prep Time 5 min Cook Time 10 min Total Time 15 min

Ingredients

1 peach, halved, with the pit scooped out

(2) 1/2 tablespoon slabs of butter

Cinnamon

4 tablespoons full-fat cream cheese

1 pinch stevia, or to taste

4-5 drops vanilla extract

1 tablespoon full-fat sour cream

Instructions

  1. Turn your oven broiler on low and let it heat up.

  2. Line a cookie sheet with foil, pinching up the sides to make a "tray".

  3. Place the peaches cut side-up on the foil, sprinkle them with cinnamon, and place a slab of butter on each.

  4. Broil the peaches for 5 minutes on low. In the meantime, mix the cream cheese, stevia, vanilla, and sour cream in a small bowl, whipping with a mixer if desired.

  5. Spoon half the cream cheese mixture into the center of each peach.

  6. Broil on low for 3 minutes.

  7. Broil on high for 2 minutes.

  8. Remove from the oven and enjoy!

Notes

If you can, try to find freestone peaches. They separate from their pits very easily, whereas cling peaches will fight you. You might end up ripping them apart (which I definitely did).
