So simple, but delicious and low carb!
Instructions
- Place homemade sauce in small saucepan over low heat. Allow to simmer while you prepare the rest of the dish.
- Make zucchini noodles, using either a spiralizer or by cutting into ribbons. Set aside.
- In skillet, cook ground turkey over medium-high heat.
- Season with salt and pepper. Once cooked through, remove turkey from skillet.
- Turn heat down to medium and add in zucchini noodles.
- Season with salt and pepper. Let cook for 1 minute just until warm (any longer and they can start getting soft).
- Remove pan from heat.
- Plate 1/4 of noodles in bowl, top with 1/4 of turkey and sauce. Finish up with a dollop or two of whole fat ricotta cheese. Repeat with remaining 3 bowls. Enjoy!
Notes If you want to save this dish for leftovers, I recommend keeping the zucchini noodles separate from the sauce to avoid the noodles getting soggy overnight.
