Ricotta Cheese, Ground Turkey, Meat Sauce, and Zucchini Noodles

So simple, but delicious and low carb!

Instructions

  1. Place homemade sauce in small saucepan over low heat. Allow to simmer while you prepare the rest of the dish.
  2. Make zucchini noodles, using either a spiralizer or by cutting into ribbons. Set aside.
  3. In skillet, cook ground turkey over medium-high heat.
  4. Season with salt and pepper. Once cooked through, remove turkey from skillet.
  5. Turn heat down to medium and add in zucchini noodles.
  6. Season with salt and pepper. Let cook for 1 minute just until warm (any longer and they can start getting soft).
  7. Remove pan from heat.
  8. Plate 1/4 of noodles in bowl, top with 1/4 of turkey and sauce. Finish up with a dollop or two of whole fat ricotta cheese. Repeat with remaining 3 bowls. Enjoy!

Notes If you want to save this dish for leftovers, I recommend keeping the zucchini noodles separate from the sauce to avoid the noodles getting soggy overnight.
