Potato Salad on the Side!

This recipe is for one of the better potato salads I've ever encountered and it's fairly simple to make. It's got a home-made quality you'll like.

Ingredients

  • 3 large baking-type potatoes

  • 8 eggs

  • 1 cup mayonnaise

  • 2-3 Tbsp. mustard

  • 1/2 large red onion

  • 1/2 large green pepper

  • 1/2 large cucumber

  • 1-2 Tbsp. fresh tarragon

  • Salt and pepper

Directions

Start by boiling the eggs and the potatoes (I generally like to start mine with the potatoes already cut). Eggs take about 13 minutes, while the potatoes may take a bit more than that. Shock both the potatoes and the eggs in cold water, peel the eggs and deposit the yellows in one dish and the whites in the other.

Mash up the yellows and add in a cup of mayonnaise and the mustard. Stir until the whole mixture is combined. Carve up the whites into small enough pieces to eat.

Combine the potatoes, eggs whites, onion, green pepper, cucumber and fresh tarragon and stir to mix.

Add the egg yellows/mayonnaise and mustard to the mix until well covered and then refrigerate at least two hours before eating.
