Oxtail Soup Recipe (Indonesian Sop buntut )

Winter in Canberra, what could be better than having a bowl of hot soup to fight the coldness. Not your regular soup, this is my take on one of my favorite Indonesian dish called- Sop Buntut :)

Ingredients:

  • 10 pieces oxtail (beef)
  • 2 pieces carrot - chopped
  • 400 ml cold water

Spices:

  • 8 Shallot - Finely chopped
  • 8 Garlic - finely chopped
  • 1 whole onion - slices
  • 1 whole fresh nutmeg grated - you can use the nutmeg powder (1x teaspoon)
  • 8 pieces cloves
  • 1 celery stick - thinly chopped (OPTIONAL)
  • 1 tomato - cut into wedges
  • 2 stalks spring onions - chopped as garnish
  • 1 teaspoon white pepper - (This really depends on your taste bud though)
  • 1 teaspoon salt - (This really depends on your taste bud though)
  • 1 tablespoon sugar - (This really depends on your taste bud though)
  • 2 tablespoon oil to fry

Methods:

  1. Boiled the water into the pressure cooker and put the oxtail into the boiling water. Get rid the excess fat from the oxtails floating around the boiling water.

  2. Fry the shallot and garlic until fragrant. Then pour these into the pressure cooker along with the oil (this is flavor goodness).

  3. Pour the cloves and nutmeg. Season well with salt, pepper and sugar. Stir and closed the lid properly and cook for around 1 hour.

  4. After an hour, check the meat if its already tender, pour the carrot, onion, tomato and spring onion. Stir the pot with low heat for another 10 minutes or until the carrot is cooked. Taste as you go!

  5. Served it hot with rice. Also sprinkle some fried shallot on top and a squeeze of fresh lime juice (Optional of course).
