Baked Chicken & Gnocchi Boscaiola

This is good ‘Go To’ recipe when you’re not sure what to have for dinner. This is another family favourite that is easy to make and really satisfying. The chicken and gnocchi work together really well, topped off with a nice lightly crunchy cheese and breadcrumb layer. In summer this is nice with a mixed salad while in winter it sits well with your favourite vegetables. I always look forward to the next day with the left-overs waiting to be reheated.

Ingredients
• 2 Chicken Fillets, use Breast Fillets and cut into 3cm pieces
• 500 g Gnocchi
• 2 tbsp Vegetable Oil
• 1 Brown Onion, Diced
• 4 slices Bacon, use short-cut bacon and coarsely chop
• 250 g Mushrooms, thinly sliced
• 1 Clove Garlic, crushed
• 250 ml Cooking Cream
• 120 ml Sour Cream
• 50 g Spinach, use baby spinach
• 1/4 cup Breadcrumbs
• 100 g Shredded Cheese, I use 3 cheese combo

Instructions
1. Preheat oven to 200° C (fan forced).
2. Cook gnocchi according to instructions on the packet
3. Heat a small amount of vegetable oil in a large pan on medium-high heat.
4. Cook chicken for 5-7 minutes or until browned. Remove from pan and set aside on plate.
5. Add vegetable oil to pan and add bacon and onion. Cook, stirring for 5 minutes or until onion softens. Leave in pan.
6. Add mushroom and garlic to the pan and cook for 5 minutes or until mushroom browns.
7. Stir in cooking cream and sour cream and simmer for 5 minutes or until creams starts to thicken
8. Add chicken, baby spinach, and gnocchi to pan and stir to mix through
9. Pour contents into a 3 litre baking dish.
10. Liberally sprinkle breadcrumbs and shredded cheese over the top of the mixture
11. Bake in oven for 15 minutes or until golden brown
