Spicy Shredded Beef

This is a great meal plan recipe because you can make a big batch and serve it with something different each night.

This is perfect for Tacos, with polenta, rice, mashed potatoes, on sandwiches, in burritos, etc., etc.

Ingredients
2 lbs beef chuck
2 poblano peppers (cored & chopped; keep seeds if you like it reeeeaaaallly spicy)
2 jalapeno peppers (cored & chopped)
4 cloves garlic (chopped)
1 onion (chopped)
1 14 oz can diced fire roasted tomatoes
½ cup chicken broth
2 tbsp canola oil
1 tsp salt
1 tsp oregano
1 tsp paprika
1 tsp cumin

Directions
1. Preheat oven to 300 degrees.
2. Mix seasonings together and rub on beef.
3. Heat canola oil in an oven safe pot.
4. Sear beef on all sides; remove and set aside.
5. Add onion, poblanos, jalapenos, & garlic to pot. Sauté 3-5 minutes.
6. Add tomatoes, broth, & beef.
7. Cover pot with lid and bake for 3 hours.
8. Shred beef and serve on tacos, sandwiches, over polenta or rice, quinoa or whatever else there is.
