What You'll Need:
Twine
A roasting pan
A whole chicken for roasting
Salt
Pepper
Step One: Leave the chicken out, until it's room temperature. Using paper towels, pat dry the outside, and the inner cavity. DO NOT RINSE OFF THE CHICKEN IN YOUR SINK. This is a very dangerous practice, and spreads potentially deadly salmonella bacteria everywhere!
Step 2: Preheat the oven to 450 degrees. Salt the inner cavity, using lots of salt. Liberally salt and pepper the entire exterior of the chicken.
Step 3: Using the twine, truss the chicken up.
Step 4: Place the Chicken in roasting pan, and cook at 450 degrees for 50 minutes.
Step 5: Remove chicken from oven, make sure it's cooked to 165 degrees, and let rest for 5-10 minutes before cutting up and serving.
