Prosciutto-Wrapped, Cream Cheese-Stuffed Dates

Ingredients

  1. 1/2 block neufctchel cheese
  2. 1 jalapeno, seeds removed and diced
  3. 1/2 tsp paprika
  4. 24 dates
  5. 2-oz prosciutto, cut or torn into small strips (should be just large enough to wrap around a stuffed date)
  6. 24 toothpicks

Instructions

  1. In food processor, pulse together cream cheese, jalapeno, and paprika until smooth and cream (it's okay to have a few small chunks of jalapeno)
  2. Make small vertical slit in each date. Using a spoon or a ziplock bag with the corner cut out, fill each date with the cream cheese mixture.
  3. Wrap stuffed date with a strip of prosciutto. Secure with a toothpick.
  4. Serve immediately or store in fridge up to overnight until ready to serve.

Notes

Makes 24 bites (about 80 calories per bite depending on how full you stuff them)
