A question about pumpkin puree!

I was making a pumpkin pie that required me to grate my pumpkin and, after I was done making everything and finally put my pie in the oven, I had some grated pumpkin left that I wanted to make puree out of and make a pumpkin spice latte.

However, when I googled some pumpkin puree recipes - they pretty much all said that I have to roast my pumpkin before I make puree out of it.

My question is: Is there any way I can make puree out of my already-grated pumpkin?
