Curried Yogurt Spread
A delicious, fat free appetizer that can and should be made in advance.

Ingredients
- 1 32 ounce container Plain Fat Free Chobani yogurt
- 1 TB olive oil
- 1 small onion, finely minced
- 2-3 tsp curry powder
- 1/8 tsp cayenne pepper
- 7 scallions, sliced and divided
- 1/2 cup chutney, with any big chunks minced
- 3/4 tsp garlic salt
- 1/2 cup dry roasted peanuts, chopped
Instructions
- Place the yogurt in a cheescloth lined colander and set over a bowl in the refrigerator 8-10 hours (Save and use the whey that has drained off!)
- Sautee onions in olive oil
- Once they are translucent, add the curry powder and cayenne pepper.
- As best as possible, 'mince' any big chunks in your chutney.
- Combine onions, strained yogurt, chutney, garlic salt and 1/2 of the scallions in a bowl.
- Mix well and refrigerate for 3-4 hours.
- To serve, spread on a plate and top with chopped peanuts and remaining scallions.
- Serve immediately once the peanuts have been sprinkled on top.
- Serve with crackers, naan or pita chips.
Notes
Have some extra chopped peanuts and scallions to top up your spread after they have all been consumed.
