Curry Yogurt Spread

Curried Yogurt Spread

A delicious, fat free appetizer that can and should be made in advance.

Prep Time:30 min

Ingredients

  • 1 32 ounce container Plain Fat Free Chobani yogurt
  • 1 TB olive oil
  • 1 small onion, finely minced
  • 2-3 tsp curry powder
  • 1/8 tsp cayenne pepper
  • 7 scallions, sliced and divided
  • 1/2 cup chutney, with any big chunks minced
  • 3/4 tsp garlic salt
  • 1/2 cup dry roasted peanuts, chopped

Instructions

  • Place the yogurt in a cheescloth lined colander and set over a bowl in the refrigerator 8-10 hours (Save and use the whey that has drained off!)
  • Sautee onions in olive oil
  • Once they are translucent, add the curry powder and cayenne pepper.
  • As best as possible, 'mince' any big chunks in your chutney.
  • Combine onions, strained yogurt, chutney, garlic salt and 1/2 of the scallions in a bowl.
  • Mix well and refrigerate for 3-4 hours.
  • To serve, spread on a plate and top with chopped peanuts and remaining scallions.
  • Serve immediately once the peanuts have been sprinkled on top.
  • Serve with crackers, naan or pita chips.

Notes

Have some extra chopped peanuts and scallions to top up your spread after they have all been consumed.
