My dad shot a moose over the weekend, ideas?

I have never had moose before, and I know I'm going to be in charge of the bulk of the cooking.

I was wondering if anyone has any favorite recipes or tips for preparing it. I would consider myself a good enough cook to be able to make a dish using said tips, so if you don't have a favorite recipe a description of the flavor would be great!

He has also saved all of the organs, so any offal recipes/ideas would be great too!
