Pretty easy.

Make shortbread (google "Walkers shortbread") in a bread pan. Make sure you pre-cut it so it's easy to split into two. Make sure you kind of "overbake" - you want it crunchy, not soft at all. I made this one day earlier.

Melt dark chocolate (DO NOT USE MILK CHOCOLATE IT WILL BE WAY TOO SWEET) + caramel (make your own, or use vanilla caramels + add some dulce de leche spread so the caramel isn't too hard).

Dip the two cookie bars' base into the melted chocolate, and let cool on wax paper.

Spoon melted caramel on top of the cookie. As it cools you can fix up the shape

Once the chocolate on the base of the cookie is cooled, put each cookie on top of two upside down cups (or a wire rack). Start to ladle melted chocolate on top of the two bars.

Use a spoon to drizzle lines across so it looks authentic.
