Good day recipe fans! I just fired up this bad boy last night, and it turned out fantastically, thought I'd share.

Ingredients List

2 chicken breasts
-
2 scallions
-
1/2 green pepper
-
1 jalapeño pepper
-
1/2 small container Laughing Cow Cheese (2x foil wrapped triangles)

1/4 cup Parmigiano-Reggiano
-
1/4 cup tomato paste
-
1 garlic clove
-
pinch oregano
-
pinch basil
-
1tsp olive oil
Side Dishes
I used wild rice, could imagine this would also go well with mashed potatoes, fries, a small salad, or mixed veggies.
Directions

Heat oil in small pan to medium heat

Slice scallions and garlic clove finely

Dice jalapeño and green pepper (small chop)

Preheat oven to 400

Add basil + oregano to veggies, cook 5 minutes in pan over medium heat

Slice chicken breasts in half
-
Remove veggies from heat, spoon mixture into chicken breasts
-
Cover mixture with Laughing Cow cheese
-
Place filled chicken breasts on a baking sheet (wrap so that mixture stays inside the breast and place them opening-side-down on the baking sheet)

Cover chicken breasts in tomato paste, cover with another sheet of aluminium foil
-
Place in oven for 25 minutes at 400 degrees

Remove aluminium foil from top of chicken breasts, grate Parmigiano-Reggiano on top of the cooked chicken, place back in oven uncovered for 5 minutes

Remove from heat, let stand 5 minutes
