- Dry Ingredients
- 2 C Flour
- 1 tsp Baking Powder
- 2 tsp Baking Soda
- ½ tsp Salt
- 2/3 C Cocoa
- Wet Ingredients
- 1 C Milk
- ½ C Vegetable Oil
- 2 Eggs
- 1 tsp Vanilla
- 2 C Sugar
- 1 C Hot Coffee
- Buttercream Recipe
- 12 oz. Unsalted Butter
- 8 oz. Margarine
- 2 tsp Vanilla
- 4 C Powdered Sugar
- Cake
- Combine wet ingredients,EXCEPT the coffee, in large bowl and mix.
- Combine dry ingredients into medium bowl.
- Add half of the dry ingredients to the wet ingredients and combine. Once thoroughly mixed add second half of dry ingredients.
- Once all the ingredients have been combined add one cup of hot coffee. Stir with spatula. The batter will be very thin.
- Grease two 9” round pans with cooking spray and dust with flour for easy release.
- Distribute batter evenly between the two pans.
- Bake at 350° for 22-25 minutes.
- Buttercream Icing
- Using a mixer, cream together room temperature butter, margarine, and vanilla
- Mix in powdered sugar one cup at a time
- Mix on medium high until icing is white and fluffy (about 2 to 4 minutes)
- For best results make icing the day before. Letting the icing sit overnight, it gets light and airy. Fluff with spatula before using.
