Biscotti with Double Chocolate

Crunchy Italian chocolate treats, perfect for a nice cup of coffee!

INGREDIENTS

60g butter, room temperature

35g white sugar

35g brown sugar (use only white if not available)

1.5 teaspoon baking powder

15g cocoa powder

1 large egg

100g white/all purpose flour, more for dusting

70g (dark) chocolate chips

INSTRUCTIONS

In a bowl, using an electric mixer, mix together butter and sugar Add baking and cocoa powder and beat for 1-2 minutes

Add the egg and then fold in the chocolate chips

Gradually add the flour

Using your hands shape a ball with the batter (add flour if too sticky)

Preheat oven to 180C

Cover and let rest in the fridge for 10-15 minutes

Roll the batter into a long log

Bake for 20 minutes (Do the toothpick test!)

Let cool for 1 hour (Be patient here!)

Cut the log into diagonal slices and bake for 5-8 minutes on each side
