Roasted Eggplant Sauce (Yogurt based)

Ingredients

1 eggplant 1 cup yogurt/curd 1/2 tsp salt

Seasoning

  1. Oil

  2. Cilantro

  3. Mustard Seeds

Procedure

  1. Roast the eggplant on the gas stove or in the oven (takes about 15 minutes or until tender)

  2. remove the skin and smash the eggplant

  3. Mix the salt and yogurt. Whisk it until it is creamy and consistent.

  4. Add finely chopped onions and then mix it with smashed eggplant and the yogurt.

This sauce can be had with Hot rice or as a dip
