Substitute for pork in potstickers/dumplings?

I'm going to be making some potstickers/dumplings for a friend who cannot eat pork. I've made this previously with great flavor and success, but I don't know what to replace pork with. I was thinking beef, but a friend suggested chicken thighs. Does anyone have any experience with either or any other suggestions?
