Moist and delicious whole wheat banana muffins!
INGREDIENTS
50g extra-virgin olive oil
70g honey
50g brown sugar
1 teaspoon vanilla extract
60ml milk (regular, almond, etc.)
2 eggs
3 ripe bananas, mashed
200g whole wheat flour
1,5 teaspoons baking powder
1 teaspoon cinnamon
Pinch of salt
60g almonds, chopped
INSTRUCTIONS
Preheat oven to 180C
Line your muffin tin with muffin cases or grease them with oil.
In a bowl, mix together oil, honey, brown sugar, vanilla extract and milk
Add eggs and bananas in the same bowl and mix
In another bowl, whisk flour, baking powder, cinnamon, salt, and then the almonds
Pour the mixture of the first bowl in the dry ingredients and fold until combined (do not overmix!)
Distribute the batter into the muffin cups
Bake for 40-45 minutes, covering the muffins with aluminum foil halfway (to prevent burnt tops)
The muffins will be ready when a toothpick inserted in the center of a muffin comes out clear
