My famous turkey chili recipe...okay, it's not that famous, but it's still good!

Ingredients

  • 2 tbs canola oil

  • 1 med. onion, chopped

  • 1 red, 1 yellow pepper, chopped

  • 1 clove garlic, minced

  • 1 lb ground turkey

  • 3-4 tbs Chipotle Dry Rub (I use my own Sweet Heat Chipotle Dry Rub, but you can substitute).

  • 1 14.5 oz can petite diced tomatoes

  • 1 11 oz can of corn

  • 1 c. Orzo I Thought

  • 3 c. chicken stock

  • Chopped cilantro, avocado, corn chips and cheddar cheese as garnish

Directions

In stock pot, heat oil and then add onions, peppers and garlic (which is optional). Stir about 5 minutes. Add ground turkey and dry rub (the more dry rub, the "kickier" the chili. Brown the turkey for 10 minutes while stirring. Add the tomatoes, corn and chicken stock and bring to a boil. Add the orzo and black beans, reduce heat and simmer for 15-18 minutes.

Season to taste with salt and pepper and generous swirls of chipotle sauce. Garnish with chopped cilantro, avocado, corn chips and cheddar cheese.
