My Homemade Ramen Recipe (makes two bowls)
What you need:
-Ramen noodles, you can use noodles from a regular packaged ramen but you can get better quality noodles at wall mart.
-meat, you can use pretty much whatever meat you want, beef, chicken, pork, or shrimp. If you want a more authentic ramen choose pork. Use one small steak or piece of pork/chicken with a bone. You need approx 1 cup of meat, maybe a little more.
-One large stuck of celery, if you can't get your hands on celery I use 1/8 tsp of celery salt.
-one sliced large carrot (about 1/2 cups of sliced carrots)
-a little less than a 1/4 cup of sliced mushrooms, regular button mushrooms from the grocery store will work, or if you have a preference in mushrooms they should taste great in the ramen. You can also substitute with dehydrated mushrooms or even canned mushrooms. If you use canned mushrooms use the juice too.
-5 cups of water,
-1 tsp of sesame seed oil,
-1/2 tsp soy sauce,
-pinch of alt,
-Garlic, preferably cloves,
-Half of a thick slice of onion
-One egg
Making the broth:
Put all the ingredients except the noodles in a medium pot, and keep the fire low. Stir occasionally, letting it boil down for about an hour, no less than 45 mins (or until the broth tastes the way you like it just make sure its not too strong) Don't worry too much about stirring your broth,
While you wait for the broth to finish boil your egg (eggs) in water with about a teaspoon of soy sauce. You want to boil the eggs for 6-8 mins. When the broth is almost ready crack the egg and slice it in half.
When the broth is ready strain out the other ingredients, leaving only the broth. The vegetables and shrimp dont taste very good in the Ramen after being cooked in the broth. I recommend not putting them back in with the noodles but you can pick some of the shrimp and carrots out and put them in the noodles if you want. If you used steak or pork slice the meat off the bone and put it back in with the noodles. chicken can just be torn off the bone and but in the ramen
After the broth is ready put it back in the pot and bring it to a light boil, then add the noodles.
Add a halve of your egg and enjoy your ramen!
