Spicing up store bought curry paste.

Posted this in the weekly thread and it got absolutly no attention. I'm making it again tomorrow so I'll make my own thread in hopes of receiving some good suggestions.

I made curry for the second time ever tonight (and first time successful). It was simple, I took:

• 12oz cod (in pieces)

• 2-2.5 tbsp of Thai Kitchen greey curry paste

• one can coconut milk

• one potato, small cubes

• half a large onion

• cayenne pepper to taste

It's pretty intuitive how I cooked this, Mixed the coconut and the paste, got it heated, threw in potatoes and onions, when the potatoes were soft I threw in the fish to let it cook, mixed in some cayenne and devoured.

I love curry, though my experiences with it aren't very wide, this was very good but how would you recommend spicing it up? The jar of paste said to also add fish sauce (which I know, msg = flavor) but I didn't have it and don't like to cook with a ton of sodium anyway and I felt the paste had enough.

Suggestions?
