Here's very tasty and simple recipe for garlic lemon chicken.
Ingredients:

Boneless Chicken Breast (5 were used in the video, adjust to your family size)

Fresh Lemons (will use zest from the peel and the juice. 1/3-1/2cup of juice for 5 breasts. 2Tbs Zest)

Fresh Garlic Cloves (1 whole garlic yielded 9 cloves and was perfect amount for 5 breasts)

Cayenne Pepper (Added per taste... I like a slight kick on mine)

Salt (to taste)

Pepper (to taste)

White Onion (one small ringed)
-
Oregano (1-1/2 to 2 Tbs)

Chicken Bullion/Stock (I use 2 cubes added to one cup of water)

Butter (2 pallets)

Vegetable or Olive Oil (about 1/2 cup... just enough to cover the bottom of the pan for a quick browning)
PS White Wine makes a nice upgrade from the Chicken Bullion if you have it available.
Directions: Add the oil and butter to a warm skillet and bring to temp. Dust the one side of the chicken with the Cayenne, Salt, and Pepper. Add the chicken to the oil and cook just long enough to put a little brown on both sides. The chicken doesn't need to be cooked all the way through, because we will be finishing it off in the oven. Remove the chicken and set it aside while we make the sauce in the same pan that we just cooked the chicken in. Add the ringed onions to the pan. Lightly saute them and then pull them out and set them aside. Now turn the heat down low and add the garlic to the pan we've been cooking in. Let the garlic cook for about a minute, don't allow it to burn. After a minute, leave the garlic in the pan and pour the lemon juice in the pan to begin deglazing it. Stir the juice around in the pan a bit to release those yummy caramelized flavors from the bottom of the pan. Now add the lemon zest and oregano to the skillet. Mix it around. Now add the chicken stock to the pan and bring it to a simmer. After simmering for a couple of minutes, remove it from the stove and pour about half of it into the bottom of your baking dish. Now lay a layer of sauteed onions to the bottom of the dish. This will serve as a bed for the chicken to rest on. Lay the chicken on then bed of onions. Pour the rest of the sauce over the chicken and lay any remaining onions across the top of the chicken. Garnish some fresh lemons and put in a 400 degree oven for about 20 minutes.
