Braised Pilsner Pork Roast with Paprika, Capers and Caraway

With the weather getting cooler and the nights longer, this hearty pork roast recipe warms the body and spirit with a savory blend of paprika, capers, & caraway and pilsner in the marinade to create a Slovak inspired meal with buttered noodles and sour cream on the side. “Dobrú chuť!”

Hardware

  • 1½ cup pilsner
  • 1½ lbs pork roast
  • 1 TBSP sweet Hungarian paprika
  • 1 TBSP capers; drained, chopped
  • 1 TBSP caraway seed
  • ¾ cup onion, chopped
  • 1½ cup beef stock
  • 1 TBSP sour cream
  • ¾ cup carrot, diced
  • 1 tsp black pepper
  • 1 tsp salt

Directions

  • Heat Big Green Egg to 350ºF
  • Add the pork and brown it on all sides
  • Combine pilsner, beef stock, carrots, onions, salt, pepper, and paprika in roast pan
  • Remove pork rost and set in roasting pan
  • Cover tightly and braise the pork ior 1½ hours, or until thoroughly cooked and tender (baste it occasionally with pan juices
  • Add the capers and caraway seeds, and cook for another 15 minutes
  • Carve pork into 1/4 to 1/2 inch slices and serve with some of the pan sauce and vegetables poured over them
  • Sour cream and buttered noodles can be served to the side

Total Time: 2 hours, 15 minutes
