I'm having a friend for dinner and any amount of spicy or strongly seasoned food makes her sick. What should I make?

She's a good friend and I want to make something she can eat. To be clear, I made impromptu nachos once with one can of regular Rotel and she said it was almost too hot. She doesn't even use black pepper much. Other than that, she doesn't have dietary restrictions. To add to the complications, we're mostly vegetarian, though we'll rarely eat chicken. No red meat or fish.

What food would you make in this situation?
