I love breaking stereotypes but sometimes you just have to embrace them. I live in Kansas City and I love barbecue. There, I said it.
For me, the perfect barbecue sauce has to strike the right balance between spicy, tangy and sweet. Below is my recipe for a barbecue sauce that really packs a powerful punch but is easy to adjust if you prefer sweeter, spicier or tangier sauce.
Ingredients:
olive oil
1 small onion, minced
2 large garlic cloves, minced
1 Tbs + 1 tsp dry mustard
2 tsp red pepper flakes
1/2 tsp smoked paprika
3 Tbs packed golden brown sugar
2 cups ketchup
1/3 cup Worcestershire sauce
1/3 cup apple cider vinegar
1 1/2 Tbs molasses
salt & pepper to taste
Directions:
In a medium saucepan, heat about a tablespoon of olive oil over medium-low heat. Add onion and garlic. Stir occasionally until golden. Whisk in dry mustard, red pepper flakes and smoked paprika—cook 30 seconds.
Stir in remaining ingredients. Cook, stirring occasionally, until thick—about 10 minutes. Enjoy!
Use right away or refrigerate in an air-tight container up to 1 month. Leftover sauce freezes well.
