Ingredients: 2 lbs of Chicken Thigh - deboned 3 Limes for juice & Zest 3 cloves of garlic 2 table spoon of honey 1 table spoon of soy sauce 1/2 table spoon of black pepper 1/2 table spoon of cumin 1/2 - 1 table spoon of brown sugar 1-2 cups of Cilantro
Directions: Mix everything inside a mixing bowl and put the chicken thighs in and let it marinade for 8 - 24 hour. Bring oil to medium high heat in a deep pan, put the chicken thighs in, and cover it with the lid for 2-3 minutes and let one side sear. Flip the chicken thighs and cook for another 2-3 minutes. Add the left over marinade into the pan and cook with the chicken for another 2-3 minutes or until the marinade reduces.
Chop up some fresh cilantro and add it into the mixture. Serve the dish with a few wedges of fresh lime and cilantro.
