This Is What It Looks Like
Ingredients
- 2 Tbsp olive oil
- 4 Tbsp. butter
- 1 cup chopped shallots
- 1 Tbsp. minced garlic
- 1 cup dry white wine
- Juice and zest from 1 lemon
- 2-3 springs fresh thyme
- 1 cup seafood stock (or water)
- 2-3 Lbs. mussels, rinsed and debearded
Instructions
- Heat the oil and butter in a stock pot or a 6-quart (large) saute pan.

Add the shallots and saute over medium heat until they're soft
and translucent, about 5 mins.

Stir in the garlic and cook for another minute.

Add in the wine, thyme, lemon juice and zest and reduce by half.

Add the stock or water and bring to a boil.

Add the mussels, stir once, then cover and cook for about six
minutes, or until all the mussels are open.
Serve immediately.
