This recipe is a very different kind of chicken curry for me, with basically a load of peanuts and a large jar of orange marmalade. It's great, by the way.
Directions

1/2 cup salted roasted peanuts, finely ground

4 oz. pound bitter orange marmalade

1/4 cup olive oil

1/4 cup fresh orange juice

3 oz. of Dijon mustard

1/8 cup fresh tarragon

2 tsp. curry powder

1/2 tsp. salt

1 chicken, cut into eight pieces
Directions
Combine the peanuts, marmalade, oil, orange juice, mustard, tarragon, curry powder, and salt in a bowl and mix well.
Cover the chicken pieces in this marinade and allow to sit in a refrigerated container for 4-6 hours, at least.
Preheat oven to 350F and bake the chicken in a shallow baking pan for about 30 minutes.
Finally, using the oven broiler or, even better, an outdoor grill, apply the chicken for about 5-6 minutes per side until the chicken is nice and caramelized. You can use additional marinade if that seems appropriate.
When the chicken is done, arrange on a serving platter and serve immediately.
