Ingredients
- One dozen hard boiled pastured raised eggs, sliced in half
- 2 Tbsp coconut oil
- 3 tsp curry powder
- 2 garlic cloves, minced
- 2/3 cup Paleo mayonnaise (recipe is in our condiments section)
- 1/2 small sweet onion, diced
- 1 1/2 teaspoons sea salt
- Paprika(optional)
- 1/2 teaspoon hot sauce
Instructions
- Melt coconut oil over low heat and stir in curry powder and garlic. (Hot sauce if desired)
- Cook until garlic is softened, about 1-2 minutes.
- Remove yolks from eggs and smash in a large bowl. Stir in curry garlic mixture.
- Add remaining ingredients and mix well.Spoon into eggs and sprinkle with paprika. Refrigerate at least 1/2 an hour before serving.
