This is something that apparently was cooked up originally by a guy named Josh Bush, and now it seems to be an industry in itself. Here's mine.
Ingredients
Barbecue Sauce

1/2 cup ketchup

1/3 cup dark brown sugar

1/4 cup unsulfured blackstrap molasses

1/4 cup apricot preserves
-
2 tablespoons yellow mustard
-
2 tablespoons apple cider vinegar
-
2 tablespoons vegetable oil

1 garlic clove, minced
-
1 1/2 teaspoons chile powder
-
1/2 teaspoon freshly ground black pepper
-
1/2 teaspoon hot sauce
-
Pinch of ground cloves
-
Pinch of ground allspice
-
Salt
Pork/Pineapple
-
Roughly 8 oz. or maybe a bit more pork butt for each pineapple
-
1 large pineapple, head and tail removed but held and skin sliced off and core removed
-
1 lb. or maybe a bit more bacon to cover the outside of the pineapple
Directions
In a medium saucepan, combine all of the ingredients except the salt with 1/2 cup of water and bring to a boil, stirring well. Let cool and season with salt.
Once the sauce is made, cover the pork butt in the sauce and install it in the center of the pineapple, then fastn the ends back on.
Cover the skin with bacon and dabble a bit more sauce on the outside.
Smoke until the meat in the center is about 150 degrees or so.
