It's a super simple recipe but it doesn't really need anything else. Sometimes I'll add a clove of garlic though if I'm feeling adventurous.
Ingredients
- 1 butternut squash
- 3 tbsp olive oil
- 2 tsp salt 1 tsp pepper
Instructions
- Preheat oven to 400°F.
- Peel, seed, and cut the butternut squash into 1x1 inch squares.
- Add the cut butternut squash into a large bowl. Add olive oil, salt, and pepper. Toss to combine.
- Arrange the squash onto a cooking sheet in a single layer. Cook for 15 minutes.
- Turn the squash with a spatula, and continue cooking another 15 minutes, or until the butternut squash is tender.
