How my mom taught me to cook Roasted Butternut Squash

It's a super simple recipe but it doesn't really need anything else. Sometimes I'll add a clove of garlic though if I'm feeling adventurous.


Ingredients

  • 1 butternut squash
  • 3 tbsp olive oil
  • 2 tsp salt 1 tsp pepper

Instructions

  1. Preheat oven to 400°F.
  2. Peel, seed, and cut the butternut squash into 1x1 inch squares.
  3. Add the cut butternut squash into a large bowl. Add olive oil, salt, and pepper. Toss to combine.
  4. Arrange the squash onto a cooking sheet in a single layer. Cook for 15 minutes.
  5. Turn the squash with a spatula, and continue cooking another 15 minutes, or until the butternut squash is tender.
