So I am planning for my girlfriends 22nd birthday and I want to make a from scratch cake for her. She's anaphylactic in regards to milk, eggs, nuts/tree nuts and seafood (but the last I'm not so worried about for desserts)
I've baked/cooked for her plenty of times; im not worried about making something she's allergic to. It's more so the technique/type of component I am stuck on.
I like the idea of many layered cake. Like really really thin layers of cake with icing/whipped cream in between each layer and you let sit overnight so it melds together. Medovik is a Russian dessert that's very similar. But she also wants chocolate and coffee as primary flavors. Also maybe coconut.
What type of dessert do you suggest? Or which component which work best as each flavor? Mocha icing? Maybe something similar to extremely thin chocolate crinkles as the cake layers? Does coconut even work well with chocolate and coffee? Maybe I can toast coconut shavings with some sugar?
