German Potato Salad (Warm potato salad w/ bacon fat dressing)
Ingredients
2 lbs red potatoes
1 onion (chopped)
5 slices thick-cut bacon (chopped)
1/3 cup white vinegar
½ cup broth
½ tsp sugar
½ tsp salt
pinch pepper
2 tbsp parsley
Directions
1. Boil potatoes for 15-20 minutes or until tender. Cool slightly and slice.
2. Fry bacon in a thick-bottomed pan until crispy. Remove and set aside.
3. Add onion to bacon grease and cook until soft.
4. Add sugar, salt, & pepper.
5. Add broth and vinegar and simmer for 2-3 minutes.
6. Mix in bacon, parsley, and sliced potatoes. Stir until evenly coated.
7. Serve warm.
