Grilled Lobster Topped with Melted Mozzarella and Bacon Dijon Aioli on Olive Oval

Ingredients:

  • 2 lobster tails in shell (split)
  • 2 Tbsp (30 mL) melted butter
  • 1 cup (240 mL) butter
  • ¼ cup (60 mL) water
  • 2 medium garlic cloves, minced
  • 2 green onions, finely chopped
  • Olive Oval Bread (4 slices)
  • 2 heaping Tbsp (30 mL) grated, good-quality mozzarella cheese
  • 1 small celery stalk, chopped
  • Bacon Dijon Aioli (see below)

Bacon Dijon Aioli

  • 2 slices bacon
  • 2 eggs (yolks only)
  • 2 medium garlic cloves, minced
  • 2 tsp (10 mL) Dijon mustard
  • ½ to ⅔ cup (120 to 160 mL) extra-virgin olive oil
  • Salt and pepper, to taste
