- 2 heaping Tbsp (30 mL) grated, good-quality mozzarella cheese
- 1 small celery stalk, chopped
- Bacon Dijon Aioli (see below)
Bacon Dijon Aioli
- 2 slices bacon
- 2 eggs (yolks only)
- 2 medium garlic cloves, minced
- 2 tsp (10 mL) Dijon mustard
- ½ to ⅔ cup (120 to 160 mL) extra-virgin olive oil
- Salt and pepper, to taste
