I'm came across this dish sometime ago and I made it tonight. I was a little sceptical at first but who knew it could taste so divine :) Banana and garlic seem to go so well together. The photo is taken from my efforts this evening.
Recipe
Ingredients
2 white fish filets 2 ripe avocados (halved and stone removed) 2 bananas 2 cloves garlic 4 tbls honey 2x spring onions, chopped Juice from 1 lemon Paprika
Method
Place the fish filets and chopped spring onions into foil and drizzle olive oil and lemon juice. Season with salt and pepper and wrap the package and place in pre-heated oven for 25 minutes.
Whilst the fish is cooking, add the honey to a pan and heat up (don't let it burn). Add the sliced banana and a little salt. Saute until the banana has a decent colour and has softened. Add the chopped garlic to the mix and add a little lemon juice. Once the garlic has softened and the fish is ready, place one half of the banana mixture into the halved avocado and place a fish filet over the mixture. Do the same with the other half. Garnish with the cooked spring onions and sprinkle with a little salt, paprika and olive oil.
Serve and enjoy
TIP: Slice a sliver from the bottom of the avocado so it will stay in place.
