Chicken Quinoa Fried "Rice:

I love making this for lunch because it's delicious, healthy, and super easy! This batch usually lasts me for 2-3 lunches.

Ingredients
3 cups cooked quinoa (1 cup uncooked)
1 onion (chopped)
1 carrot (chopped)
2 eggs
3 boneless chicken thighs (diced)
½ cup frozen peas (thawed)
1 tbsp canola oil
1 tsp sesame oil
2-3 tbsp soy sauce
1/2 tsp salt & pepper

Directions
1. In a cast iron pan, heat ½ tbsp. canola oil. Add chicken and 1/2 tsp of salt & pepper. Cook until chicken is no longer pink. Remove and set aside.
2. If needed, add another ½ tbsp. canola oil to pan. Add chopped onion and carrot. Cook until brown and soft.
3. Add peas and cook 2-3 minutes.
4. Push veggies to one side of the pan.
5. Beat eggs with a few drops of soy sauce and sesame oil.
6. Add sesame oil to other side of pan and add eggs. Scramble, then mix with the veggies.
7. Add cooked chicken, quinoa, and 1 tbsp. soy sauce to the pan. Add more soy sauce if desired.
