I'm two weeks into a cutting diet, and while my weight loss is going great, I've been pretty monotonous in terms of my meals. I eat eggs for breakfast, and I've been making big pots of bean-based soups and chilies that I can eat for days at a time. My third meal of the day is typically a veggie-heavy salad with a pan-fried chicken breast or salmon filet, or a can of tuna. I snack on fruit and nuts to fill in the gaps.
I don't own an oven and have only a two-burner countertop stove. What are some clean dishes that you love? I'm looking for things that are low in calories while packing in the protein. Fat is totally fine as well. I'm not used to counting calories when I cook, and most of the dishes I'd typically bust out are rammed with butter or cheese and stuff -- chicken wings, mac & cheese, gumbo, buttery steak, etc.
Chicken & bean chili is a good example of a dish that fits my current needs. I also recently made another soup with pumpkin, white beans, and tomatoes, and I also added the chicken from having made the soup's chicken stock base the night before. When that soup runs out, I've got lentil soup on deck.
But I've got at least two more months of cutting to go, and while I do love soups, they're getting a bit boring. I'd love some great protein options that I can pair with steamed or sauteed veggies. What can I make?
