So, I wanted to make some kind of cereal bar I can take to work or eat as a snack.
So I got myself some ingredients and started with these
Ingredients: * 2c. Rolled oats
-
1/2c. Pumpkin seeds
-
1/2c. Sunflower seeds
-
1/2c. Sesame
-
1/2c. Raisins
-
2 Eggwhites
-
3 tbsp. Crunchy peanutbutter
-
3 tbsp. Honey
-
3 tsp. Coconut oil
-
1/2 tsp. Salt
-
Cinnamon to taste
I then proceeded to: 0. preheat oven to 150C (~300F ?)
-
In a bowl mix 1 tbsp. of Honey with 3 tsp. Coconut oil and 1/2 tsp. salt, then add the rolled oats and place on baking try lined with baking paper
-
bake rolled oat mix for 5-7min or until golden brown
-
place toastet oats in bowl, add the rest of the ingredients except the eggwhites
-
mix and let cool a little, then add eggwhites and mix again
-
place on baking tray lined with nonstick paper, shape to rectangle and bake for 20mins at 160C
-
remove from oven, cut into bars while hot then let cool on wire rack.
The bars look somewhat like this. It tastes good, but it's a little dry. So my question to you guys would be what can i do to add a little moisture to it, but still have a rather crunchy texture?
Thanks in advance!
