I am cooking for a new guy I'm dating and he loves Mexican food. Which, arguably may be the Tex-Mex that Texas is "known" for, but I'm wanting to wow him with some fantastic, authentic tacos. Any recipes you go for? My specialty is Italian - flair, so Hispanic spices are still pretty new to me.
Also, I want to make queso. Not the garden variety Velveeta/rotel dip that Texans swear by. Some FABULOUS queso.
