Lentil and sweet potato soup

INGREDIENTS

1 tbsp olive oil

1 red onion, cut in half and finely sliced

2 cloves garlic, peeled and crushed

1 large sweet potato, peeled and cut into bite sized pieces

1 large carrot, peeled and cut into small cubes

6 cups vegetable stock

½ tsp salt

¼ tsp black pepper

½ tsp cumin

¼ tsp cayenne

1 tsp curry powder

1 cup red lentils

1 broccoli, cut into small florets

½ head of cauliflower, cut into small florets

INSTRUCTIONS

Heat the oil in a large Dutch oven or stockpan.

Saute the onion and garlic for 5 minutes.

Add the sweet potato, carrot, cauliflower and spices and stir to coat.

Add the stock and lentils and bring to a simmer. Simmer for 15 minutes.

Add the broccoli and cauliflower and simmer for another 8 minutes.

Divide over individual bowls and serve immediately.
