Ingredients:
- 2 cups whole wheat flour
- 6 ounces blueberries
- 2 cups buttermilk
- 2 large eggs, beaten
- 3 tablespoons butter, melted
- 2 tablespoons granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Directions:
- In a bowl, whisk together the eggs, butter, sugar, vanilla extract, and buttermilk.
- In a separate bowl, combine the whole wheat flour, baking powder, baking soda, and salt.
- Pour wet mixture into dry mixture and combine until lumpy.
- Toss in the blueberries and fold until combined.
- Set skillet to 375°F and pour 1/3 cup batter onto skillet.
- Wait for 3-4 minutes and flip. Continue to cook for an additional 3-4 minutes.
- Garnish with blueberries, add some syrup, and enjoy!
