Throw Back Tuesday Red Pork Curry

650 gpork mince 1/3 cupred curry paste 2 400ml cans coconut milk 1/2 600g packet frozen stir-fry vegetables, thawed cooked jasmine rice, to serve

Steps- Red pork curry

Combine mince and half the curry paste in a large bowl. Shape mince into 20 meatballs. Heat a large frying pan over moderate heat. Cook meatballs, in batches, for 2-3 minutes or until browned. Transfer to a heatproof bowl. Reduce heat.

Add coconut milk and remaining paste to pan. Simmer, uncovered, stirring occasionally, for 5 minutes. Add meatballs. Simmer curry, uncovered, for 3-4 minutes or until meatballs are cooked. Stir in vegetables; simmer curry tor 3 minutes or until heated.

Spoon jasmine rice into bowls. Top with curry. Serve.

Tips Use bought green curry paste instead of red.
