Matcha Coconut Pancakes

Serving: - 1 Plate [8 - 9 pancakes]

Ingredients:

  • ⅓ cup coconut flour
  • 6 egg whites
  • ½ cup buttermilk
  • 2 tbsp. yogurt
  • 1 tbsp. matcha green powder
  • 1 tbsp. honey
  • ¼ tsp. baking powder
  • 1 tbsp. cooked Soy Beans
  • 1 tbsp. honey
  • 1 tbsp. chopped pistachio

Directions:

  1. Mix coconut flour, buttermilk, matcha, baking powder, honey and egg white using a blender.
  2. Heat a non-sticky pan over medium heat.
  3. Pour the mixture in the pan (approximately half a cup for each pancake) and cook until the mixture is covered with foams.
  4. Very carefully turn over the pancakes and heat another side too until it turns golden color.
  5. After preparing several pancakes, top up one pancake with another making around three layers.
  6. Garnish with spoonful of yogurt, cooked black beans, chopped pistachio and sprinkle honey.
  7. Serve.
