Mongolian Beef w/ Rice

Ingredients:

  • 1 1/2 pounds flank steak
  • 1/2 cup vegetable oil
  • 1/2 cup cornstarch
  • 2 cups brown rice
  • 3/4 cup brown sugar
  • 1/2 cup soy sauce
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons ginger, minced
  • 6 stalks green onion (about 1 bunch)

Directions:

  1. Cook rice according to package directions.
  2. Chop green onion into 1/4 inch pieces.
  3. Slice flank steak into 1/2 inch pieces.
  4. Toss flank steak in cornstarch and set aside for 15 minutes.
  5. Meanwhile, make the sauce. Start by heating 1 tablespoon of vegetable oil in a medium saucepan over low heat.
  6. Add minced ginger and garlic. Sauté for approximately 1 minute.
  7. Add soy sauce, brown sugar and 1/2 cup water to saucepan. Bring contents to a boil.
  8. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  9. In a large skillet, heat half of the remaining vegetable oil over medium-high heat.
  10. Add half the flank steak pieces and cook for 2-3 minutes per side, flipping once, until brown and crispy. Remove steak from pan with a slotted spoon and place aside on paper towels.
  11. Add remaining vegetable oil to skillet. Repeat step 10 to cook the remaining steak.
  12. Once steak is cooked, discard excess oil. Reduce heat to medium-low and return steak to skillet.
  13. Pour sauce over steak and add green onions. Simmer for 5 minutes.
  14. Serve over rice and enjoy!

Tortillas

Tortillas

Yield: 10 10" Tortillas

Ingredients


  • 2 heaping cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons lard (Crisco works, as well)
  • 1 cup hot water

Instructions


Use a whisk and mix together the dry ingredients. Next, use a wooden spoon to initially mix the dough until it gets to a shaggy state.

Flour your hands and fold in half until all the flour is incorporated.

Put flour on a work surface and dump the dough there.

Using a scale, portion out 60 grams of dough. This recipe will make about 10 10" tortillas.

Next, Ball up the dough into a nicely shaped ball.

Then flatten the ball. keeping it round. Each ball should be about 2.5" across and about 1/4" thick when done. This may be sticky, so put some flour on your surface and place the flattened ball on the surface to absorb some of the flour. Then stack the flattened balls.

Turn your skillet or griddle on to high. You want very high temperature. There will be smoke with this so turn on the fan on your range.

Using a rolling pin, flatten. The method I use is to put some flour on the surface, roll the dough flat north/south. This should make it about 1/3 as thin as it was.

Flip the dough over, putting more flour down. While doing that, rotate the dough 90 degrees. Now roll flat the east/west. It should be round- ish at this point.

Keep rolling until it's thin - very very thin. You want about 1/16" thick when done.

Toss onto your hot griddle. You'll need a big spatula. Pop the bubbles if they get too big. It's easier if you have two people, but you need to keep an eye on your cooking tortilla.

Try out the first one you make if you'r enew to this. It shouldn't be tough. If it's tough, roll it thinner or your baking powder may be dead.

Repeat the process until all tortillas are cooked.

Like anything to do with baking/flour, the quantity of tortillas could change based on temperature and humdity.

Request : The Keg Garlic mashed potatoes

Does anyone know the recipe for the garlic mashed potatos at the Keg? If you've ever worked there and know what goes into it, please let me know. If you haven't worked there, but have tried them and found a recipe that closely matches it, I'd also really appreciate it. I have tried a couple copycat recipes and something is missing but I can't put my finger on it.

Thes are literally the only mashed potatoes I even like and I can't get enough of them.

Hi! I'm super new to reddit and am not quite sure how to use it but I was wondering if anyone could suggest cookbooks or recipes for a picky eater who is trying to be healthy. I have trouble trying new things and am looking for a way to change my diet for the better. Any suggestions?

Had a dream that I made the perfect Mexican rice, so now I'm compelled to make it this weekend. Any tips for a flavorful batch?

I think I have the ingredients down, as many of the recipes call for the same array of items, but all suggestions are welcome (especially in the veggies and garnishes department! I love me some texture). However, the amount of liquids required vary in the recipes I've encountered. I prefer the rice on the drier/less sticky side, so I am also specifically looking for a magic ratio of liquid-to-rice if anyone has that!

Ingredient List (so far):

-long grain white rice

-tomato

-onion (doesn't specify white or yellow)

-garlic

-cilantro

-lemon/lime juice (I'll probably use both, I love the tang)

-chicken broth

-tomato paste

-cumin

-olive or canola oil

-salt

-chili peppers (not sure which to use, I've seen serrano, jalapeño, green, & hatch all mentioned)

-chili powder

-annatto & turmeric for color

Garnishes to choose from so far (again not sure what is best here or if there are others I'm not aware of):

Sweet Carrots

Total Time: 20 mins

1 1/2 c. clean, raw carrots

2 tbsp. butter

1 clementine orange, washed and peel on

2 tbsp. brown sugar

6 whole cloves

1 c. water

Quarter the clementine. Slice the carrots widthwise (so they look like circles) into small but not tiny pieces. You'll want thinner cuts at the thick end of the carrot and thinner cuts near the narrow end so the carrots cook evenly.

Place the clementine pieces in a small saucepan and add the butter and cloves, melting the butter over low heat. Be careful not to burn the butter, which will require you to either swirl the pan or stir the contents often.

Add the carrots to the melted butter mixture and coat the carrots in the pan while still over low heat. Cook for two minutes, stirring frequently, again making sure your butter does not burn.

Add the brown sugar, coat the carrots quickly and then add the water. The water does not need to cover all the carrots. Increase burner heat to medium and cover.

Cook carrots 15 minutes or until tender but still firm, stirring occasionally. Carrots are done when you can stick a fork in them easily. If they break apart when you do this, you've cooked them a little too long.

Remove carrots from glaze and serve warm.

Pumpkin, carrot and bean soup, perfect for winter

INGREDIENTS

1 tbsp olive oil

1 brown onion, finely slices

2 cups vegetable stock

1 lb butternut pumpkin, peeled and cut into ½ inch cubes

2 medium carrots, peeled and cut into ½ inch cubes

1 14oz / 400g can cannelini beans

½ tsp salt

½ tsp chilli

¼ tsp black pepper

½ tsp cumin

INSTRUCTIONS

Saute the onion for 5 minutes.

Add the stock and bring to a boil.

Add the pumpkin and carrots and simmer for 25 minutes.

Add the spices and beans and simmer for another 5 minutes. Serve immediately.

Help with a Contest

Hey everyone, I'm looking for some recipes for a family competition that we're having tomorrow. We have to use six ingredients: seafood, broccoli, rosemary, lemon juice, pasta, and gruyere cheese, and we don't know what to do. "Churro Chips"

Ingredients

  • 1 package corn tortillas
  • 1/2 cup vegetable oil (can also use lard, 1/4 cup)
  • 1/4 cup sugar
  • 1/4 cup cinnamon

Cooking

  1. cut tortillas into triangle chip shapes. fry them in oil/lard until golden brown and crispy. mix cinnamon and sugar in a bowl or a deep sided dish. after chips are golden brown, remove them from oil and let drain on a paper towel and cooling rack or plate. when mildly warm, toss chips in cinnamon and sugar.

I want to make some coconut chicken curry with my crock pot tonight but the last time I made it, it turned out okay. What can I do to make it amazing?

This is the recipe I wanted to make. It was my first time making curry with my crock pot a few days ago and it turned out okay. It smelt great but I couldn't really taste the spices that I added. Maybe it was because I used peanut butter instead of tomato sauce? It also turned out super oily which was probably because I added too much coconut oil. I wanted to add vegetables too but I don't know which vegetable would taste good with it.

I want to make it again today but I want it to be better this time. Any tips for a sweet, creamy, and flavorful curry (without tomato sauce though cause I don't have any right now)?

Any cheesecake recipes that don't require sugar?

And I don't mean replacing sugar with some type of artificial sweetener.

Also, is sugar necessary for the structural integrity of a cheesecake or can it be left out completely?

My mom wants a cheesecake for New Years Eve but due to health concerns will not eat sugar. I personally don't like the taste of splenda and the like. Are there recipes that don't require any sugar period? I would like to rely on the other ingredients to keep it tasty but I will be making a fruit topping as a side for people who want it sweeter.

I've tried looking stuff up online but everything seems they still require some type of sugar.

Southwest quinoa salad

INGREDIENTS

1 cup uncooked quinoa

2 cups stock

1 can black beans, drained and rinsed

1 red bell pepper, seeded and diced

½ red onion, finely diced

1 punnet cherry tomatoes, sliced in halves

1 cup frozen corn

⅓ cup olive oil

⅓ cup cilantro

1 lemon, juiced

½ tsp cayenne peppers

1 tsp cumin

½ tsp salt

INSTRUCTIONS

Cook the quinoa according to the instructions on the package.

Prepare all the vegetables and beans and put them in a mixing bowl.

Fry the corn in a pan over high heat until slightly charred.

Add the corn and the quinoa to the vegetable mixture.

Whisk the olive oil, lemon juice, cilantro and spices in a small bowl.

Add the mixture to the vegetables, quinoa and corn and mix well.

Divide the salad over bowls and serve immediately topped with cilantro. Alternatively store in fridge for up to 3 days in airtight container.

Fruit Sushi - Great healthy dessert idea

Ingredients:

  • 1½ cups sushi rice
  • 8 ounces coconut milk
  • 2 cups water
  • 3 tablespoons granulated sugar
  • ¼ teaspoon salt
  • 1 ½ teaspoons of vanilla extract
  • Choose your favorite fruit

Directions:

  1. In a medium saucepan, add the rice, water, sugar, and salt and bring to a boil.
  2. Once boiling, turn down to low and cover. Cook an additional 15-20 minutes.
  3. Once all the water is absorbed by the rice, remove cover and turn off heat.
  4. Pour in the coconut milk and vanilla, stir ingredients together.
  5. Once combined, spread out evenly on a baking tray to cool.
  6. Slice, peal, cut, and chop all your favorite fruit while the rice cools.
  7. Place plastic wrap on a sushi mat.
  8. Spread out rice onto plastic wrap into a rectangle shape.
  9. Dip the paddle or your hands into water, it will help you spread out the rice.
  10. Lay your fruit about 2 inches from the top.
  11. Begin to roll the closest part of the sushi roll over the top and down.
  12. Cover with additional fruit or even toasted coconut.
  13. Once rolled, slice sushi into 1 inch slices.
  14. Dip in fruit puree or warm chocolate sauce!

New Year's Eve get together, what to make?

Decided to have a couple friends over for NYE. Need something simple, as one of my guests eats cheese, hamburger, chicken, and pepperoni pizza almost exclusively. Any suggestions on what to make for a group of 8 including one with the palate of a 5 yr old and 2 vegetarians? I thought about a baked potato bar, but that seems a bit flat. We'll be eating and then celebrating around a bonfire ao I wanted to keep it fairly low key. Thanks!

REUBEN WONTONS WITH HOMEMADE RUSSIAN DRESSING

A spin-off on the classic Reuben sandwich, these Reuben Wontons are easy-to-make and fun to eat. Serve with this homemade Russian Dressing for dipping.

Recipe type: Appetizer
Serves: Approx 54 wontons
Ingredients
• Wontons
• ¼ lb corned beef, roughly chopped
• ¼ cup green onions, thinly sliced
• 1 cup sauerkraut, drained
• ¼ cup parmesean cheese, shredded
• 1 package Wonton Wrappers (about 54)
• 2 Tablespoons canola oil (or other oil for high heat)

Russian Dressing
• 1-2 cloves garlic, minced
• ¼ cup onion, diced
• ½ cup mayo
• ¼ cup plain greek yogurt
• 1 Tablespoon ketchup
• 1 Tablespoon vinegar
• 2 teaspoon Sriracha sauce (or other hot chili sauce)
• Green onions, thinly sliced, for garnish.

Mix all ingredients. Adjust heat level to taste. Garnish with green onions.

Instructions Prepare your Wonton making station. You will need a small bowl of room-temperature water for sealing the Wontons.

Working with one wonton at a time, place a heaping teaspoon of corned beef in the center of your wonton wrapper. Add about a teaspoon of sauerkraut, a pinch of parmesan cheese, and a few slices of green onion. This should all add up to about a tablespoon of ingredients.

Dip you finger into the water and run across adjacent edges of the wonton wrapper to wet. Fold the wonton wrapper corner-to-corner. Press firmly to seal edges. With wet fingers, wrap the two other corners to overlap over the center filling. Set aside.

Add 1 tablespoon oil to a hot frying pan over medium heat. (Temperature may vary)

Working in two batches, add wontons one at a time to hot pan. Cook until browned on one side. Flip wontons and cook until browned.

Remove wontons and place on a paper towel lined plate. Cover with foil to keep warm.

Repeat with second batch.

Pasta Arugula Salad

This is my favorite salad. It's suitable for most occasions and can serve as a main or side dish. It takes around 20 minutes to prepare.

The ingredients (in a copyable fashion):

  • 500 g Pasta
  • 250 g Mini Tomatoes
  • 250 g Mozzarella
  • 125 g Arugula
  • 100 g Green Pesto
  • 2 Tablespoons Honey
  • 2 Tablespoons Mustard
  • 1 Handful Grinded Parmesan Cheese

Cook the pasta as described on the package (al dente). While the pasta is cooking you can cut the mozzarella and the tomatoes. I divide the tomatoes once or twice, depending on their size. The mozzarella is cut into pieces roughly the same size as the tomato pieces.

Add everything to the bowl, except the arugula! It takes a long time mix everything up if you add the arugula directly. Mix the ingredients until everything is coated than add the arugula and mix it again.

I'm ecstatic, as I'm still in University and can't afford all the kitchen appliances I want. As of right now all I have are a kitchenaid stand mixer (my baby I loves her oh yes) and now a food processor. Fancy side dishes to go with prime rib?

This year for New Years Eve my boyfriend and I decided to stay in and cook a huge meal to ring in the new year. I cook all the time, but I think at this point he's tried pretty much of all of my recipes, and I'd like to make something new. Do you guys have any good side dish recipes that would go well with prime rib? Preferably things that aren't very standard or too easy? I'd like to cook out of my comfort zone a bit for this one.

Creamy Broccoli Pasta

== INGREDIENTS ==

  • Enough pasta for two people
  • 1 precooked broccoli
  • 1 roughly chopped garlic
  • 1 handful of strong cheese
  • 1 tablespoon of flour
  • a good portion of butter
  • 250 ml of cream
  • 250 ml of milk
  • nutmeg
  • pepper
  • basil
  • orgegano
  • salt

== RECIPE ==

  1. Melt some butter in a pot
  2. Make sure the fire is on low heat
  3. Add oregano, basil and garlic
  4. Let it infuse for a couple of minutes
  5. Take the garlic out
  6. Add the tablespoon flour
  7. Whisk it up
  8. Add the cream
  9. Whisk it up
  10. Add the milk
  11. Whisk it up some more
  12. Turn up the heat and let it cook
  13. Once it's about to boil lower the fire
  14. Season it with pepper, salt and nutmeg
  15. Whisk it up
  16. Once the sauce is almost ready add the cheese and let it melt while stirring
  17. Pour the sauce over the precoocked broccoli and pasta
  18. Stir it gently and it's ready to be served!

Spicy sweet potato salad

INGREDIENTS

2 large sweet potatoes, cut into bite size pieces

5 tbsp olive oil

1 400g / 14oz can black beans

½ red onion

¼ cup red wine vinegar

1 small red bell pepper, chopped into medium sized chunks

1 tsp cumin

½ tsp salt

½ tsp black pepper

1-5 bird's eye chilli's, depending on how well you handle spice

4 spring onions, chopped finely

½ avocado, cut into small chunks

INSTRUCTIONS

Put the sweet potato in a baking dish, toss with 1 tbsp of olive oil and season with salt and chilli powder. Bake in the oven at 200C/390F for 20 minutes, turn the sweet potato and bake for another 10 minutes. Set aside to cool slightly.

In a food processor combine 4 tbsp olive oil, red bell pepper, red wine vinegar, cumin, salt, black pepper and the chilli's until smooth.

In a large mixing bowl combine the roasted sweet potato, black beans, red onion and the dressing.

Garnish with the spring onion and avocado and serve hot or cold.

Tortilla Chicken Soup

Spectacular.

Ingredients

  • 2 chicken breast (or whatever cut you prefer)
  • 3-4 tsp Taco seasoning (homemade or packet)

  • 1 cup diced onion

  • 1/2 cup diced green/red/yellow bell pepper

  • 3 cloves minced garlic

  • 1 can (10 oz) Rotel (tomatoes and green chilies)

  • 4 cups chicken stock

  • 3 tbsp tomato paste (or just tomato sauce)

  • 4 cups hot water

  • 1 can (15 oz) drained black beans

  • 1 can corn

  • tortillas

Directions

1) Preheat oven 375F/190C. Drizzle chicken with olive oil and some of the taco seasoning. Bake 20-25 min or until done. Shred, set aside.

2) Heat oil in large pot. Add onion, bell peppers, garlic. Start cooking, then add the rest of the seasoning. Stir, then add chicken, then stir.

3) Add rotel, chicken stock, tomato paste, beans, and water*. Bring to a boil, then reduce heat then simmer uncovered for ~30 minutes, stirring occasionally.

  • my pot couldn't hold the full 4 cups. I added about 2c, then after simmering for awhile, added some more.

4) After ~30 minutes simmering, add corn, some salt, and more seasonings to taste. Continue simmering for another 15-20 minutes. Turn off heat and allow to sit for at least 10 minutes.

5) Crisp up some tortillas, then slice into strips. Add on top of the soup when served, along with your choice of garnishes.

Garnishes

Top with any or all of the following: sour cream, green onion, avocado, grated cheese, cilantro.

For the time it takes, the resulting pot of soup is hearty and yet clean.

Lemon Roasted Chicken with Potatoes

Ingredients

  • 1 Whole Chicken
  • 1 Whole Lemon
  • Rosemary 4-5 Fresh Sprigs
  • Olive Oil
  • 1/4 Tsp Kosher Salt
  • 1/4 Tsp Fresh Cracked Pepper
  • Small metal skewers 3 or 4 for closing the chicken up
  • Cooking Twine
  • Fingerling Potatoes - small bag

Instructions

  1. Preheat your oven to 400*

  2. Prep: 15 Minutes

  3. Wash your chicken with water and rinse out the inside of it and throw away the end trails of the chicken. Dry off your chicken with papers towels.

  4. Put about a ¼ teaspoon of the salt and pepper inside the chicken.

  5. Cut your lemon into half and put them inside the chicken giving them a slight squeeze too.

  6. Take the whole rosemary on the sprig and shove that in with the lemon inside the chicken.

  7. Now take 1 of your skewers and sew up the opening of the chicken so there isn’t an opening.

  8. Take 2 more skewers and pin the wings up so they don’t fall down to the side.

  9. Take a long piece of cooking rope and tie the legs together so they are up.

  10. Put the chicken in a large glass pyrex cooking dish. Set aside.

  11. Fingerling Potatoes: Wash & dry them and put them in the same Pyrex dish with the Chicken & evenly distribute.

  12. Pour a little of the Olive Oil over the Potatoes and Chicken… Not to much you don’t want everything to burn up….

  13. Put some Salt and Pepper on top of the Chicken & Potatoes too…

  14. You are done with your prep!

  15. Put your dish in the oven for 1 hour… Done!

Pull it out of the oven and start cutting it up and serve!

Cheese roll with eggs and garlic - a simple recipe that will satisfy everybody. Tasty and fastcooking snack! These cheese roll - a great recipe for each day, or for the holiday table. You can change the recipe to your liking, adding new ingredients to the cheese, egg, pita bread and greens. It's a healthy, nourishing meal, simple to cook and easy to eat or takeaway.

Ingredients: Thin pita bread or tortilla – 1 piece Cheese – 200 g. Eggs – 4 pcs. Garlic – 4 cloves Mayonnaise or yoghurt – 100g. Fresh herbs – to taste Salt and pepper – to taste

Cooking: 1. Boil hard 4 eggs 2. Grate the cheese on a fine grater 3. Chop fresh herbs 4. Mix cheese and fresh herbs 5. Add some garlic 6. Clean the eggs 7. And grate them on a fine grater 8. Add some salt and pepper 9. Add mayonnaise or fat yogurt 10. Mix well 11. Put the stuffing on pita bread or tortilla uniform layer 12. Gently fold in the roll 13. Place the roll in the refrigerator for 1 hour, so he become impregnated 14. Cut into pieces 2 cm wide 15. Enjoy!

White Chocolate Cranberry Macademia Nut Cookies

These things are always a hit around Christmas, they're beautiful, festive, and delicious! They are also an interesting twist on Christmas cookies. I don't know about you guys, but I find myself getting a little bored with the usual cookie routine, it's nice to have something a little different.

Ingredients(they're in the wrong order because I just copied and pasted from a table on google docs):

1 cup butter flavor crisco

2 ½ cups flour

¾ cup granulated sugar

1tsp baking soda

¾ cup light brown sugar

½ tsp salt

2 eggs

1 cup fresh cranberries

1tsp vanilla

⅔ cup macadamia nuts

2T milk

1 package white chocolate chips

Method:

-Preheat Oven to 375°

-Rinse, dry, and pick through cranberries(they should be hard, bouncy, and sound hollow)

-Check nuts for discolored ones and chop nuts, and berries.

-Place nuts and berries in a bowl and sprinkle with some flour, set aside.

-Combine crisco and sugars in a large bowl.

-Once mixture is light and fluffy, add eggs and vanilla.

-In a separate bowl, sift together flour, baking soda, and salt

-Alternate adding milk and flour to sugar mixture, mix well after each addition.

-Fold in nuts, berries, and chips

-Drop cookies onto baking sheet lined with parchment paper

-Bake 8-10 minutes(cookies will appear moist, don’t over bake if you want chewy cookies)

I honestly prefer them with less white chocolate... I'm not really a fan of the stuff. I don't think it should be left out though, and she has told me milk chocolate is NOT an okay substitute in this case.

Homemade Thai Curry Chicken

I served the curry with the rice, quite delicious!

Ingredients:

  • 1 tablespoon vegetable oil
  • 13 1/2 ounces coconut milk, 1 can
  • 2 tablespoons fresh basil, chopped
  • 4 ounces curry paste (red or yellow)
  • 1 medium onion, chopped
  • 1 medium red bell pepper, chopped
  • 2 cups carrots, chopped
  • 1 pound chicken breast, pieces
  • 2 cups potatoes, chopped (Yukon Gold)

Directions:

  1. Cut chicken into 1/2 inch pieces.
  2. In a pot, over medium heat add oil and curry paste. Stir for about 1 minute.
  3. Add chopped carrots, onion and bell pepper to pot.
  4. Cook until onions are translucent, about 10 minutes, stirring occasionally.
  5. Add chicken, potatoes, coconut milk, 1 tablespoon of basil and 1 1/2 cups water.
  6. Bring contents to a boil.
  7. Reduce heat to low. Simmer and cook for 20-25 minutes, stirring occasionally, until chicken is cooked through.
  8. Serve curry in bowls, topped with the additional fresh basil.

Brussels Sprouts, with Apples, Red Onions and Walnut Vinaigrette

Serving Size: 4

Ingredients:

  • 1 lb. Brussels sprouts, trimmed and halved
  • 3 red onions thinly sliced
  • 3-4 apples, sliced
  • 1 tablespoon oil
  • 1 cup walnut pieces, toasted
  • ¼ cup white wine vinegar
  • ¼ cup walnut oil
  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable bouillon
  • 1 teaspoon onion powder

Directions:

  1. Trim the Brussels sprouts and cut in half.
  2. Place in a steamer and steam until barley al dente.
  3. Slice the red onions thinly.
  4. Toast the walnut in a dry pan.
  5. Reserve a few walnuts as garnish, and place the rest in a blender or food processor.
  6. Add the vinegar, walnut oil and sesame oil.
  7. Pulse until pureed.
  8. Add the vegetable bouillon powder and onion powder.
  9. Pulse once again to make a smooth sauce.
  10. If the apples are organic, core and slice.
  11. If not organic, peel also.
  12. Heat the oil in a large frying pan.
  13. Fry the red onion slices.
  14. Once the red onions are soft, add the steamed Brussels sprouts.
  15. Lightly fry to brown parts of the Brussels sprouts.
  16. Add the sliced apples.
  17. When the apples have warmed, but are not over-cooked …remove the pan from the heat.
  18. Serve the dish as a side dish or a warm salad with the sauce drizzled on top.

Looking to raise the level of my Christmas ham

Hello! I've purchased a nice sized smoked ham shank from my local grocery store and wanted to ask if anyone had any recipes, tricks, tips etc to make it a better meal. All I really have are the basic instructions to set the oven at the temp and stick it in for the alotted time. Is there something I could coat the ham with, veggies that go well with it in the oven, or anything like that? I'm not a fan of honey glaze or really adding any sweetness but that's all I've found so far. Thanks for any advice in advance!

Trying to make a cherry timbit recipe?

I want to make a batch of cherry timbits (AKA donut holes) as they stopped selling them at Tim Horton's. I've found this glazed sour cream donuts recipe, which is close to what I'm looking for - I'd prefer fried to baked to get as close as possible to the original taste - but I'm not sure how to alter the recipe to get the cherry taste.

For those unaware, the cherry timbits were basically balls of fried cherry flavored cake (there weren't whole pieces of cherry, but the cake was reddish-pink and had little red dots in it) and had a simple glaze. I think the glaze from this recipe looks pretty good.

Anyway, I'm not sure if I should start with some cherry cake mix from the store (if you can even make fried donuts from that), or make them from scratch, but again, not sure what to add or substitute to get that nice cherry flavor.

Pizza Casserole

This is primarily a dish for low carb eaters, but regular non dieting folk really enjoy it as well.

Ingredients:

  • 3 cups shredded cheese

  • 8oz cream cheese

  • 1/2 cup sour cream

  • 1 tbs garlic powder (or minced garlic)

  • 8oz favorite pizza sauce

  • Your favorite pizza toppings

Directions:

  1. Mix 1 cup shredded cheese, sour cream, and cream cheese and set as your base in a casserole dish.

  2. Brown 1lb hamburger (season with garlic) and spread as your 2nd layer.

  3. 3rd layer spread the can of pizza sauce.

  4. 4th layer spread 1 1/2 cups shredded cheese.

  5. 5th layer add your favorite toppings.

  6. 6th layer add last 1/2 cup cheese.

  7. Bake in a 400 degree ( f ) oven for 25-30 minutes.

Southwest quinoa salad bowl

INGREDIENTS

1 cup uncooked quinoa

2 cups stock

1 can black beans, drained and rinsed

1 red bell pepper, seeded and diced

½ red onion, finely diced

1 punnet cherry tomatoes, sliced in halves

1 cup frozen corn

⅓ cup olive oil

⅓ cup cilantro

1 lemon, juiced

½ tsp cayenne peppers

1 tsp cumin

½ tsp salt

INSTRUCTIONS

Cook the quinoa according to the instructions on the package.

Prepare all the vegetables and beans and put them in a mixing bowl.

Fry the corn in a pan over high heat until slightly charred.

Add the corn and the quinoa to the vegetable mixture.

Whisk the olive oil, lemon juice, cilantro and spices in a small bowl. Add the mixture to the vegetables, quinoa and corn and mix well.

Divide the salad over bowls and serve immediately topped with cilantro. Alternatively store in fridge for up to 3 days in airtight container.
