Is homemade bologna reasonable to attempt? Does anyone have a recipe?

I'd like to try to make bologna.

I see a lot of recipes online with a very coarse grind, and it comes out looking like a meatloaf.

I'd like to get a somewhat smoother final product line store bought.

I know I'm going to need to purchase gear (grinder, etc), but I'm down to give it a shot.

Anyone know anything?
