Ingredients
Chicken
- package of chicken drumsticks and thighs (the drumstick pack I used had 5 and the thigh pack 4)
- 3 tsp olive oil
- 2 tsp cumin
- 6 garlic cloves, minced (I've also used 3 tsp crushed garlic before)
- 2 tsp salt
Tzatziki
- 20 oz yogurt
- 2 cucumbers, chopped
- 2 tsp dried dill
- 2 cloves garlic, minced
- salt
- rice or white vinegar
Curry Potatoes
- 6 yukon potatoes, quartered
- 1 tsp turmeric
- 2 tsp curry powder
- 2 tsp garlic powder
- 3 tsp olive oil
Cooking
- season chicken in a bowl and let sit and marinate for at least 3 hours. while chicken is marinating, make the tzatziki. take cucumbers and chop them into small pieces. place in a bowl and add the yogurt and the rest of the ingredients. mix well and place in fridge until ready to serve.
- once chicken is ready, remove from bowl and place in a baking dish with some oil in it to prevent chicken from sticking. bake at 350F for 20 minutes. once 20 minutes is up, add the quarter potatoes to another baking dish that has oil on it and pour the seasonings over the potatoes. mix the potatoes and seasoning in the baking dish. once potatoes are well covered in seasonings, place in oven next to or on the other rack as the chicken. cook both the chicken and the potatoes for 20 more minutes (this will be 20 more minutes for the chicken, and 20 first minutes for potatoes.)
- once the skin on the chicken is a golden roasted brown and the potatoes are nice and crispy and soft in the middle, remove both from oven. take tzatziki our of fridge and serve with the potatoes and chicken. I like to accompany this meal with kalamata olives and baba ganoush or fattoush.
