Slow Cooker Pot Roast

Enjoy a hearty bowl of pot roast- a traditional meat n' potatoes ' veggie type of dish.

Ingredients:

  • 3 pounds chuck roast
  • 1 medium onion
  • 4 large carrots
  • 6 small potatoes
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 2 sprigs fresh thyme
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper

Directions:

  1. Cut carrots, potatoes and onion into small pieces.
  2. Season chuck roast liberally with salt and pepper.
  3. Depending on the size, you may need to cut the roast into 2 or 3 smaller pieces.
  4. Heat olive oil in skillet over medium-high heat.
  5. Sear both sides of chuck roast in skillet for 2 minutes per side.
  6. Place roast in slow cooker. Add cut vegetables.
  7. Pour beef broth over ingredients to cover.
  8. Toss in 2 sprigs of thyme. As an alternative, you can also use dry thyme or dry rosemary.
  9. Cook on low for 4 hours. If your chuck roast is 4-5 pounds, cook for at least 5 hours.
