Ingredients:
- 1½ cups sushi rice
- 8 ounces coconut milk
- 2 cups water
- 3 tablespoons granulated sugar
- ¼ teaspoon salt
- 1 ½ teaspoons of vanilla extract
- Choose your favorite fruit
Directions:
- In a medium saucepan, add the rice, water, sugar, and salt and bring to a boil.
- Once boiling, turn down to low and cover. Cook an additional 15-20 minutes.
- Once all the water is absorbed by the rice, remove cover and turn off heat.
- Pour in the coconut milk and vanilla, stir ingredients together.
- Once combined, spread out evenly on a baking tray to cool.
- Slice, peal, cut, and chop all your favorite fruit while the rice cools.
- Place plastic wrap on a sushi mat.
- Spread out rice onto plastic wrap into a rectangle shape.
- Dip the paddle or your hands into water, it will help you spread out the rice.
- Lay your fruit about 2 inches from the top.
- Begin to roll the closest part of the sushi roll over the top and down.
- Cover with additional fruit or even toasted coconut.
- Once rolled, slice sushi into 1 inch slices.
- Dip in fruit puree or warm chocolate sauce!
