Radishes in Chilli Oil Sauce (Qiang Luo Bo)

Ingredients

  • 2 bunches of red radishes

  • 1/4 tsp salt

  • 1 tsp caster sugar

  • 2 tbsp light soy sauce

  • 2 tbsp chilli oi l

  • 1/4 tsp sesame oil

Instructions

  • Top and tail the radishes, then smack them with a rolling pin to crack them open (careful not to smash them into pieces - you just need them loosened up)

  • Add the salt and mix together. Leave for 30 minutes Combine together the sugar and soy sauce in a bowl. Add the chilli oil and sesame oil

  • Drain the radishes (they should have released some water after being cracked), then pour over the sauce. Mix well and serve
